Woohoo! It is Shrove Tuesday, commonly known as pancake day in less than a week!
It is one of my favourite days of the year as the whole family gets together and has a laugh making, tossing (ahem and sometimes dropping) and finally tucking into a delicious feast of pancakes. It is just flippin brilliant!
Nothing, in my opinion can ever beat the traditional sprinkling of lemon and sugar topping and this is my recipe.
Ingredients
1 pint of milk
Pinch of salt
2 eggs
8oz plain flour (or gluten free flour)
Butter/oil for the pan
1 x lemon
Sugar
Method
1. Put all the flour into a bowl followed by a pinch of salt and the eggs.
2. Add the milk and whisk the ingredients until the batter is smooth.
4. Pour the batter into the pan and tip it from side to side until the bottom is evenly coated.
5. Cook for a couple of minutes then take a peak underneath the pancake by lifting the edge to see if it is lightly browned underneath.
6. Now comes the fun bit. Flip the pancake so that it falls flat onto its other side into the pan and cook for a further minute. (Or alternatively slide a spatula/pan slice underneath it and turn it over that way)
7. Collapse into giggles when it sticks to the ceiling or completely misses and falls onto the floor.
8. Slide the ones that you caught in the pan onto a plate and top with a sprinkling of sugar and a squeeze of fresh lemon. Fold in halve or fold in a quarter, or simply roll it up - whatever takes your fancy. Oooooooh heaven.
