I thought a perfect way to start this blog would be to offer you some cake so I have chosen to share with you the most light, fluffy, yummy lemon drizzle cake you will ever make/taste.
I think I started making this recipe, as soon as I could hold a wooden spoon (well I was very young anyway), which just shows how easy it is.
Method
Ingredients
6oz self raising flour
6oz caster sugar
4oz marg
3 tablespoons milk
2 eggs
Rind of a lemon (or two if you like a strong lemon flavour).
Method
Line and grease a loaf tin.
Put all the ingredients in a bowl and mix for 3 minutes. (I use an electric mixer).

Bake in the oven at 160 degrees (or if using fan 140 degrees) for between 40-50 mins but I find that in my oven it usually takes around 60 minutes before it is juuuuust right.
Test if it is baked by inserting a skewer and when it comes out clean it is ready!
On nearing completion the aroma in the kitchen will be heavenly and believe me, you will have all your friends/family in the kitchen waiting for a slice before it is even out the oven!
Topping
Juice of a lemon
2 or 3 tablespoons icing sugar depending on taste (I usually put 2 tablespoons just because I like mine a little less sweet).
Blend juice of lemon with the icing sugar.

When cake is still warm pour the liquid over the cake and leave to cool.
(Well that is the theory... in my house it is usually half eaten before then!)
Now grab that cuppa, relax and enjoy!
